We are making wine again

This is the time of year when we start making our fames wines again.
We started of by making our fist brew out of Prickly Pear. First we have to burn of the prickles, then peal and cut.
On the way where I went to work, until last week, there was a big cactus with a abundance of prickly Pears. One evening I went and got 30 pounds of the fruit and we cut it up and soaked them in lots of sugar water to start the fermenting. The fermentation went very fast, as we had a few very hot days, after only 4 days we could move the nectar into the glass carboy where it now has to keep fermenting for another 10 weeks and then we can bottle.
Last weekend, as I described below we went to Santa Ynez and got 40 pounds of apples, coming home on Tuesday evening, Patricia did not let me rest, first thing we have to get the apples into the bucket of sugar water and honey (lots of it).
Now we just have to wait and see. I have started to wash bottles, and we have now enough wine to fill 100 bottles, and some stage in the next few month.
I have no idea what fruit my honey comes up with next, I just assume it's going to be exciting.
